Mary Carroll's opened its doors on March 27th, 1997, by proprietor Conor Hartnett from Limerick, Ireland. Conor moved to New York when he was 25 to pursue the American Dream. He worked as a carpenter, a painter, an artist, and fatefully a busboy come bartender ( for Lily Flannagan's . Where he met his wife Andrea, the unsung hero of Mary Carroll's ). Five years later his dream came true when he bought a dump in Babylon Village and set about turning a pig's ear into a silk purse. A lot has been done in 25 years, but Conor considers it a lifelong project to try and attain the perfect pub.
